Toffee Apple & Almond Crumble Delight

This toffee, apple, and almond crumble is the ultimate comforting dessert, combining soft, caramelised apples with rich toffee and a golden, nutty topping. The almonds add a delightful crunch, balancing the buttery crumble and gooey filling. Serve it warm with a scoop of vanilla ice cream or a drizzle of cream for a truly irresistible treat.
Ingredients
For the sauce:
125g golden syrup
125g light brown sugar
100ml single cream
50g butter
1 tsp vanilla extract
For the crumble:
175g self-raising flour
Grated zest of 1 lemon
90g light brown sugar
50g ground almonds, toasted
90g butter, cubed
For the filling:
6 apples, cut into 2cm chunks
25g butter
Method
Preheat the oven to 180°C/350°F
Add all the ingredients for the toffee sauce into a saucepan over medium heat and boil for 2-3 minutes until smooth, set aside
Place the flour and lemon zest into a bowl, rub in 50g of the butter. Stir in the sugar and ground almonds, refrigerate until you’re ready to use it
Melt the remaining butter in a frying pan, add the apples and toss until the apples begin to soften. Add around half of the toffee sauce, and continue to simmer until the apples are fully coated and cooked
Pour the apples into a pie dish, sprinkle the crumble over the top and place into the preheated oven for 20-30 minutes, or until the crumble is a light golden colour
Serve warm with softly whipped cream, and a jug of the remaining warm toffee sauce
